Ox Tail Soup
Yummy, spicy fall off the bone ox tail soup. Designed for use with a pressure cooker.
Ingredients
- 4 lbs ox tail
- 1 whole yellow onion
- 4 cloves garlic
- 1 Tbsp thyme
- 2 Tbsp red pepper flakes
- 2 whole bay leaves
- 4 tsp smoked paprika
- 3 cups bullion / bone broth / etc
- 3 cups water
- 4 tsp tomato paste
- 1 Tbsp salt
- 0 tbd optional: carrots | cauliflower | mushrooms
Instructions
Chop the onions and mince the garlic, if you have time sauté them in olive oil.
Combine the onions, garlic, water and bullion (or bone broth, etc) in the pot of your pressure cooker.
Add in the thyme, red pepper flakes, smoked paprika, bay leaves, tomato paste, salt and optional vegetables.
Sear the ox tail in a pan on medium heat for maximum flavoring.
Put the oxtail in the pot - make sure it's safe within the limits of your pressure cooker. Then set on high pressure for 55-65 minutes.
